Born in the province of <strong>Shaanxi<\/strong>, in northwest China, it is said to have more than <strong>2,000 years<\/strong> of history.<br>In the Warring States era, soldiers and merchants needed an easy-to-take meal: a flatbread stuffed with meat simmered in spices. Simple, nourishing and incredibly tasty.  <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In its traditional version, <strong>pulled pork is simmered for a long time in a fragrant broth<\/strong> \u2014 a technique similar to &#8220;red braised pork&#8221; (hong shao rou). In some Muslim regions of China, pork is replaced by <strong>spiced braised beef or lamb<\/strong> , accompanied by coriander and chili peppers. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The bread, called <strong>mo (\u998d)<\/strong>, is a small, slightly leavened flat loaf, dry-baked in a skillet or stone oven. Drain, rinse and clean the pan.<br>Place the meat back in the pan with the 700 ml of water, Shaoxing wine, sugar, soy sauces, spices and herbs. Bring boil, then reduce heat to low.<br>Simmer for <strong>1h30 to 2h<\/strong> until the meat is melting with a fork. Taste and add salt at the end of cooking.   <\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\"><strong>Tip<\/strong> : the gentler the cooking, the juicier and fragrant the meat becomes.<\/p>\n<\/blockquote>\n\n\n\n<h4 id=\"2-faire-les-pains-mo\" class=\"wp-block-heading\">2. <strong>Make the loaves<\/strong><\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">In a bowl, mix the flour, baking powder and salt.<br>Gradually add the warm water while kneading. Form a soft and homogeneous ball, then knead <strong>for 10 minutes<\/strong> to activate the gluten.<br>Cover and let rise for <strong>1 hour<\/strong>, until the dough doubles in size. <\/p>\n\n\n\n<h4 id=\"3-faconner-les-mo\" class=\"wp-block-heading\">3. <strong>Shaping the mo<\/strong><\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Punch down the dough, knead for 5 minutes, then divide into <strong>12 balls<\/strong>.<br>For each ball:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Roll into a stick,<\/li>\n\n\n\n<li>Spread in strips,<\/li>\n\n\n\n<li>Fold in half,<\/li>\n\n\n\n<li>Roll into a snail (the end underneath),<\/li>\n\n\n\n<li>Flatten into <strong>a 10 cm<\/strong> disc.<br>Leave to rest for 20 minutes under a damp cloth.<\/li>\n<\/ul>\n\n\n\n<h4 id=\"4-cuire-les-mo\" class=\"wp-block-heading\">4. <strong>Cook the mo<\/strong><\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Heat a flat-bottomed skillet over medium heat (no fat).<br>Bake the buns for <strong>2 minutes on each side covered<\/strong>, then <strong>1 minute uncovered<\/strong> to brown them.<br>The outside should be slightly crispy, the inside still tender.<\/p>\n\n\n\n<h4 id=\"5-assembler-le-rou-jia-mo\" class=\"wp-block-heading\">5. <strong>Assembling the Rou Jia Mo<\/strong><\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Take out the meat, <strong>chop it coarsely<\/strong>.
