The result is Italian biscotti with golden chickpea flour , fragrant, a little richer in protein than a classic version, with a firm texture that keeps very well.

It’s exactly the kind of healthy sweet recipe that we like to keep in a metal tin: a homemade cookie, easy to prepare, gourmet but reasonable, that can be nibbled on with an espresso, a black tea, an infusion or even a glass of sweet wine in the Italian spirit. Biscotti, or cantucci depending on the region and usage, are associated with Tuscany, especially in Prato, and are traditionally dried almond biscuits, baked and then cut before being dried in the oven.

Why are these protein biscotti with chickpea flour so interesting?

These Italian biscotti with chickpea flour have everything you love in a homemade biscuit recipe: crunch, fragrance, almonds, real resistance to cooking and a little Mediterranean note. But their difference comes mainly from chickpea flour.

Wheat flour provides structure. It makes it possible to obtain a dough that holds together well, easy to shape into sausages and then to slice after the first cooking. Chickpea flour, on the other hand, gives a deeper, slightly nutty, almost toasted flavor. It makes protein biscotti more rustic, more nourishing, with a naturally more golden color.

The sugar remains present, because a biscotto must keep its biscuit and gourmet side, but the recipe is deliberately balanced: no icing, no cream, no melted chocolate, no heavy filling. Sweet olive oil, very Italian in spirit, replaces butter. It brings softness to the dough before double baking, then a dry and crumbly texture once the cookies have cooled.

Eggs play an essential role: they bind the dough, provide hold and contribute to the golden colour. The almonds, on the other hand, give the real crunch of the almond biscotti. They can be kept whole for a more traditional effect or coarsely crushed for easier cutting. The lemon or orange zest awakens the whole thing and balances the more vegetal flavor of the chickpea flour.

The result: Italian biscotti with chickpea flour that remain delicious, but more interesting than a simple industrial dry biscuit. It’s a perfect recipe for those looking for a healthy homemade snack, a protein snack or an easy Italian recipe idea to prepare in advance.

Italian biscotti: history, tradition and French and Algerian cousins

The word biscotti comes from the idea of double baking: historically, the term refers to preparations cooked twice, in order to make them very dry and therefore easy to store. This logic was very useful for travel, long storage periods or transported meals. In Italy, the word “biscotti” can refer to cookies in general, while the internationally known dry almond cookies are often called cantucci, cantuccini or biscotti di Prato.

Tuscan cantucci are traditionally prepared with flour, sugar, eggs and almonds. They are baked in the shape of an elongated loaf, then sliced while still warm before being put back in the oven to dry. The most classic version is enjoyed with Vin Santo, an Italian sweet wine in which the biscuit is dipped to soften it slightly.

But the idea of the dry, crunchy biscuit, rich in dried fruit, also exists elsewhere. In France, we think of the croquants of Périgord, the croquants of Provence, Cordes or Nîmes. These are dry almond biscuits, sometimes called “toothbreakers”, which are found in several regions of the South. French croquants share with biscotti this taste for preservation, the very firm texture and the combination of flour-sugar-almonds.

In Algerian cuisine, there is also a very close cousin: the croqué, this dry family biscuit that is prepared in large trays, sliced after cooking and served with coffee with milk, tea or snack. Depending on the family, it can be flavored with lemon, vanilla, seeds, dried fruit or cocoa. Like Italian biscotti with chickpea flour, the croqué has this generous, practical and popular side: a simple cookie, made to last, but always associated with a moment of sharing.

It is this link between Italy, southern France and the Maghreb that makes this recipe particularly interesting. These homemade crunchy biscuits tell the same culinary story: that of dry, economical, fragrant biscuits, which are prepared with ingredients from the cupboard and kept for several days without losing their flavor.

Chickpea flour: benefits, taste and use in baking

Chickpea flour is obtained from finely ground dried chickpeas. It is widely used in several Mediterranean and world cuisines: for socca niçoise, Italian farinata, panisses, certain pancakes, doughnuts or savory preparations. In a sweet recipe such as Italian biscotti with chickpea flour, it brings an original and more nutritious touch.

Its first advantage is its protein content. According to the nutritional reference bases, chickpea flour is naturally richer in protein and fiber than conventional white wheat flour.

In baking, however, chickpea flour has a particular behaviour. It does not give the same elasticity as wheat flour, as it does not structure the dough in the same way. It can make preparations more crumbly, denser and sometimes a little brittle. That’s why this recipe for Italian biscotti with chickpea flour mixes the two flours: 180 g of wheat flour and 120 g of chickpea flour. This keeps it in good shape, while enjoying the taste and nutritional profile of the chickpea.

The limit to remember: do not exceed about 40% chickpea flour in this recipe. Beyond that, biscotti can become too crumbly, difficult to slice, and slightly floury on the palate. In the right dose, on the other hand, chickpea flour results in crunchier Italian cookies that are more fragrant, golden, and filling.

Ingredients for lemon almond biscotti with chickpea flour

For about 20 to 24 Italian chickpea flour biscotti, you’ll need:

180 g wheat flour

120 g chickpea flour

120 g sugar

2 eggs

70 ml mild olive oil or 80 g melted butter

1 teaspoon baking powder

1 pinch of salt

fine zest of 1 lemon or 1 orange

1 teaspoon vanilla extract, optional

80 g whole or coarsely chopped almonds

30 g pine nuts or pistachios, optional

Sweet olive oil is ideal for a Mediterranean version, lighter in the mouth and very consistent with the Italian spirit. The melted butter will give a rounder, more biscuity flavor, but a slightly less “rustic” result. For really fragrant almond biscotti , choose unblanched almonds: their skin reinforces the toasted taste and gives a nice cut.

Italian biscotti with chickpea flour recipe

Preheat the oven to 180°C. In a large bowl, combine the wheat flour, chickpea flour, sugar, baking powder and salt. Add the eggs, sweet olive oil, lemon or orange zest, and vanilla if using. Mix with a spoon or by hand until you have a firm dough, slightly sticky but able to hold together.

Then add the almonds and pine nuts or pistachios. If the dough really sticks too much, add a small spoonful of wheat flour, but avoid adding too much: a dough that is too dry will give biscotti that are difficult to shape.

On a baking sheet covered with baking paper, form two long, flattened logs about 25 cm long and 5 to 6 cm wide. Space them out well, as they will swell slightly when cooked.

Bake for 20 to 25 minutes. The logs should be lightly browned and firm to the touch. Remove them from the oven and let them cool for 10 minutes. This step is important: if they are too hot, they crash; if they are too cold, they break.

Turn the oven down to 160°C. With a saw knife or a very sharp knife, cut the logs into diagonal slices of about 1.5 cm. Lay the slices flat on the baking sheet and return to the oven for 10 to 12 minutes. Flip the biscotti, then continue cooking for an additional 8 to 10 minutes.

Italian chickpea flour biscotti should be dry, golden, but not too dark. They will harden further as they cool. Let them cool completely before storing them in an airtight box.

Tips for making homemade crunchy Italian cookies

The first tip is not to overdo on the chickpea flour. It is delicious, but it makes the dough more fragile. The right balance here is to use it as a complement to wheat flour.

Second tip: let the logs really cool before cutting them. Ten minutes is usually enough. For a clean cut, use a saw knife and make gentle movements, without crushing the dough. If the almonds are whole, go slowly to avoid breaking the slices.

Third tip: adapt the second cooking to your taste. For very dry biscotti, perfect for dipping in coffee, extend for 2 to 4 minutes. For a slightly less harsh texture, reduce the second cooking slightly.

For a more Mediterranean variation, add orange zest, a few fennel seeds, unblanched almonds and a dash of anisette or marsala. For a milder version, replace the pine nuts with pistachios and add a touch of cinnamon.

Italian biscotti with chickpea flour can be kept very well for 10 to 15 days in a metal can, away from moisture. Avoid the refrigerator: it softens the biscuits.

Macros and nutritional values of protein biscotti

For a recipe that yields about 24 biscotti, a serving of 1 biscotto contains approximately:

Calories: 120 to 125 kcal

Protein: 3.3 to 3.5 g

Carbohydrates: 14 to 15 g

Fat: 5.5 to 6 g

Fibre: approx. 1.3 g

These values are estimates, calculated with the olive oil option and the addition of 30 g of pistachios or pine nuts. But they are real protein biscotti, more interesting than a classic biscuit thanks to the chickpea flour, eggs and almonds. They are perfect for a coffee break, a homemade snack or a little treat after a meal.

Healthy, crunchy and truly original Italian biscotti

These Italian chickpea flour biscotti are proof that a healthy recipe can stay simple, indulgent, and full of character. We find the spirit of Italian cantucci, the texture of traditional dry biscuits, the scent of almonds and citrus, but with a more modern and more protein touch.

Chickpea flour brings a rustic flavor, a pretty golden color, and real nutritional value. Combined with wheat flour, it makes it possible to obtain crunchy, well-structured biscotti that is easy to store. It’s a perfect recipe for a change from classic biscuits, a more satisfying homemade snack or an original Italian dessert with a coffee.

<g ></g> Print Recipe

Italian biscotti with chickpea flour

Italian chickpea flour biscotti, crunchy, lemon or orange flavored, garnished with almonds and baked twice for a dry and irresistible texture.

FAQ: Italian biscotti with chickpea flour

Can you make these biscotti only with chickpea flour?

It is not recommended for this recipe. Chickpea flour makes the dough crumblier and harder to slice. For crunchy but solid Italian chickpea flour biscotti , it’s best to mix it with wheat flour.

Are chickpea flour biscotti gluten free?

No, this recipe contains wheat flour. For a gluten-free version, you would have to replace the wheat flour with a gluten-free pastry mix, but the texture will be different and more fragile.

Can you substitute olive oil for butter?

Yes. Mild olive oil gives a more Mediterranean version, while melted butter gives a more biscuity taste. Both options work very well.

Why do my biscotti break when cut?

They can break if the puddings are too hot, too cold, overcooked, or if the dough contains too much chickpea flour. Let cool for 10 minutes and use a sharp saw knife.

What to serve Italian biscotti with?

They are perfect with an espresso, a cappuccino, a black tea, a citrus infusion or a sweet wine such as Vin Santo. They can also be served with an orange salad, mascarpone cream or vanilla ice cream.

To make Italian chickpea flour biscotti, mix 180 g wheat flour, 120 g chickpea flour, 120 g sugar, 2 eggs, 70 ml sweet olive oil, yeast, salt, citrus zest and almonds.
