Its development is located in China about 2,200 years ago, but its manufacture and aromatic profile then evolved differently depending on the regions of Asia. <\/p>\n\n<p class=\"wp-block-paragraph\">The principle of fermented soy sauce seems simple: soybeans, sometimes wheat, water, salt and microorganisms. In traditional Japanese production, soybeans and wheat are inoculated with molds to form koji. The enzymes produced then begin to transform proteins and sugars before a second fermentation in brine. It is during these transformations that much of the umami and aromas characteristic of shoyu develop.   <\/p>\n\n<h3 id=\"de-la-chine-au-shoyu-japonais\" class=\"wp-block-heading\">From China to Japanese Shoyu<\/h3>\n\n<p class=\"wp-block-paragraph\">Chinese traditions of fermented condiments gradually circulated in East Asia. In Japan, they gave rise to <strong>shoyu<\/strong>, which has become one of the fundamental seasonings of Japanese cuisine. <\/p>\n\n<p class=\"wp-block-paragraph\">The term <em>shoyu<\/em> appears in Japanese texts as early as the late fifteenth century. Production then developed strongly between the sixteenth and seventeenth centuries, particularly in the Kansai and Kanto regions. <\/p>\n\n<p class=\"wp-block-paragraph\">Classic Japanese shoyu usually combines soy and wheat in close proportions, while some Chinese sauces use more soy than wheat. This difference in raw materials and fermentation directly influences the fragrance, sweetness, colour and aromatic power of the condiment. <\/p>\n\n<p class=\"wp-block-paragraph\">For this <strong>soy marinated beef steak<\/strong>, a classic Japanese <em>koikuchi-type<\/em> soy sauce is particularly easy to use: it&#8217;s balanced enough to season the meat without completely masking its taste.<\/p>\n\n<h2 id=\"sauce-soja-claire-foncee-tamari-ganjang-quelles-differences\" class=\"wp-block-heading\">Light soy sauce, dark soy sauce, tamari, ganjang: what are the differences?<\/h2>\n\n<p class=\"wp-block-paragraph\">There is not just one soy sauce, but a multitude of traditions.<\/p>\n\n<p class=\"wp-block-paragraph\">In Japan, traditional classifications distinguish <strong>koikuchi<\/strong>, a versatile and dark soy sauce; <strong>the usukuchi<\/strong>, lighter in color but not necessarily less salty; <strong>tamari<\/strong>, generally richer in soybeans and containing little wheat; <strong>shiro shoyu<\/strong>, very light and rich in wheat; and <strong>saishikomi<\/strong>, stirred a second time to obtain a particularly dense and complex sauce.<\/p>\n\n<p class=\"wp-block-paragraph\">In China, light soy sauce, used for seasoning, and dark soy sauce, which is darker and often used to bring color and roundness to stews, is very common. However, the manufacturing methods and names remain much more diverse than this simplified distinction would suggest. <\/p>\n\n<p class=\"wp-block-paragraph\">In Indonesia, <strong>kecap manis<\/strong> is yet another family: this thick, sweet soy sauce has a very different profile from a Japanese shoyu.<\/p>\n\n<p class=\"wp-block-paragraph\">Soy sauce is particularly interesting for meat marinades. This combination can be found, for example, in the Philippino <a href=\"https:\/\/dumplingsandmore.fr\/post\/bistek-tagalog-boeuf-marine-a-la-sauce-soja-recette-philippine\/\" target=\"_blank\" data-type=\"post\" data-id=\"200\" rel=\"noreferrer noopener\">Bistek Tagalog <\/a>, where beef marinates with soy sauce and citrus fruits before cooking. <\/p>\n\n<p class=\"wp-block-paragraph\">In Korea, soy sauce or <strong>ganjang<\/strong> belongs to the great culture of <em>jang<\/em>, the fermented condiments that also include doenjang and gochujang. The knowledge and practices related to jang-making in the Republic of Korea were inscribed in 2024 on UNESCO&#8217;s Representative List of the Intangible Cultural Heritage of Humanity. <\/p>\n\n<p class=\"wp-block-paragraph\">For a <strong>ribeye marinade<\/strong> like the one in this recipe, just choose a good naturally brewed soy sauce that&#8217;s not too sweet.
