The ink reinforces its iodized character while giving the pasta that spectacular color. Cephalopods use it as a defense mechanism, but humans have long used it in a variety of areas, including as a pigment and as a food ingredient.   <\/p>\n\n<p class=\"wp-block-paragraph\">However, its interest is not only visual.<\/p>\n\n<p class=\"wp-block-paragraph\">The ink has a marine, saline and slightly deep flavour that naturally amplifies the taste of the shellfish.  <\/p>\n\n<p class=\"wp-block-paragraph\">That&#8217;s what makes a <strong>squid ink sauce<\/strong> so interesting: it brings a lot of character without requiring a multitude of aromatics.<\/p>\n\n<p class=\"wp-block-paragraph\">To make <strong>spaghetti with squid ink<\/strong>, you can collect the bags present in very fresh cuttlefish or buy ink packaged in bags or small jars at some Italian fishmongers and grocery stores.<\/p>\n\n<p class=\"wp-block-paragraph\">If you are using a fresh poach, handle it gently and pierce it only when preparing the sauce.<\/p>\n\n<h2 id=\"les-ingredients-essentiels-des-spaghetti-al-nero-di-seppia\" class=\"wp-block-heading\">The essential ingredients of spaghetti al nero di seppia<\/h2>\n\n<p class=\"wp-block-paragraph\">This <strong>Venetian recipe<\/strong> is deliberately short.<\/p>\n\n<p class=\"wp-block-paragraph\"><strong>Spaghetti.<\/strong>  Choose good quality spaghetti, ideally with durum wheat semolina and with a slightly rough surface. Linguine also works very well. <\/p>\n\n<p class=\"wp-block-paragraph\"><strong>The cuttlefish.<\/strong> For this <strong>cuttlefish spaghetti<\/strong>, count on about 400 to 450 g of cleaned cuttlefish for four people. Asking your fishmonger to clean it saves a lot of time. <\/p>\n\n<p class=\"wp-block-paragraph\"><strong>Ink.<\/strong>  A tablespoon is usually enough to give a very intense color and a real seafood depth to the sauce.<\/p>\n\n<p class=\"wp-block-paragraph\"><strong>Olive oil.<\/strong>  It is the main fat in the recipe and then allows the pasta cooking water to emulsify the sauce.<\/p>\n\n<p class=\"wp-block-paragraph\"><strong>Dry white wine.<\/strong>  It deglazes the juices and provides acidity. No need to use an expensive bottle: just choose a dry white wine that you would be willing to drink. <\/p>\n\n<p class=\"wp-block-paragraph\"><strong>Garlic, onion and parsley.<\/strong> This trio forms the aromatic base of this <strong>squid ink pasta<\/strong>.<\/p>\n\n<p class=\"wp-block-paragraph\">Finally, tomatoes remain optional. Some Venetian preparations of <em>seppie in nero<\/em> do use a little tomato, while others favor an all-black sauce. Prepare the cuttlefish<\/h3>\n\n<p class=\"wp-block-paragraph\">If your fishmonger hasn&#8217;t already, remove the inner bone, innards, and skin if necessary.<\/p>\n\n<p class=\"wp-block-paragraph\">Store ink bags carefully without puncturing them.<\/p>\n\n<p class=\"wp-block-paragraph\">Rinse the cuttlefish quickly and then cut it into thin strips or small cubes.<\/p>\n\n<h3 id=\"2-preparer-la-sauce\" class=\"wp-block-heading\">2. Prepare the sauce<\/h3>\n\n<p class=\"wp-block-paragraph\">Heat the olive oil in a large saut\u00e9 pan.<\/p>\n\n<p class=\"wp-block-paragraph\">Add the finely chopped onion or shallots and let them sweat for about 5 minutes over low heat without browning.<\/p>\n\n<p class=\"wp-block-paragraph\">Add the garlic and continue cooking for a minute.<\/p>\n\n<p class=\"wp-block-paragraph\">Stir in the cuttlefish and saut\u00e9 for 2 to 3 minutes.<\/p>\n\n<p class=\"wp-block-paragraph\">Deglaze with the white wine and reduce for about 2 minutes.<\/p>\n\n<p class=\"wp-block-paragraph\">Add 2 to 3 tablespoons of water, cover, and simmer gently for 10 to 15 minutes, or until the pieces are tender.<\/p>\n\n<p class=\"wp-block-paragraph\">If you choose the tomato option, stir in the concentrate or passata after the wine.<\/p>\n\n<h3 id=\"3-cuire-les-spaghetti-al-dente\" class=\"wp-block-heading\">3. Cook the spaghetti al dente<\/h3>\n\n<p class=\"wp-block-paragraph\">Meanwhile, bring a large pot of salted water to a boil.<\/p>\n\n<p class=\"wp-block-paragraph\">Cook the spaghetti until <strong>al dente<\/strong>.<\/p>\n\n<p class=\"wp-block-paragraph\">Before draining, scoop out at least one large ladleful of cooking water.<\/p>\n\n<h3 id=\"4-incorporer-lencre\" class=\"wp-block-heading\">4. Incorporate the ink<\/h3>\n\n<p class=\"wp-block-paragraph\">Lower the heat under the saut\u00e9 pan.<\/p>\n\n<p class=\"wp-block-paragraph\">Dilute the squid ink in 2 to 3 tablespoons of the pasta cooking water.
