First we have the white rice, which is quite neutral, then the very fragrant beef, almost caramelized around the edges. Next to it, the minute cucumber brings something fresh and crunchy while the gochujang sauce adds chilli, acidity and a little sweetness.

Bulgogi-style ground beef is deliberately an adaptation of the traditional Korean dish. In a classic bulgogi, the beef is usually cut into very thin slices and then marinated with soy sauce, garlic, sesame oil, sugar and often pear or onion.

Here, the ground beef allows you to transform this idea into an easy Korean recipe for the evening : no need to cut the meat thinly, no long marinade and everything is prepared while the rice cooks.

Korean apple vinegar also plays an interesting role. It gives the bulgogi beef sauce a little fruity and tangy note that is reminiscent of the usual presence of fruits such as pear in some marinades, while honey provides the sweetness necessary for caramelization.

It’s exactly the kind of original ground beef recipe I like to make on weekdays: little prep, a lot of taste, and enough components to make the bowl really interesting.

Korean street food: from markets to pojangmacha

It’s impossible to talk about Korean cuisine for beginners without mentioning street food. In South Korea, traditional markets and pojangmacha, these stalls or small street tents, are an integral part of urban culinary culture.

You can eat tteokbokki, gimbap, mandu, sundae, jeon, kebabs or all kinds of dishes to share.

Some food districts have several decades of history. In Busan, for example, the food street at Gukje Market has more than 60 years of history and is still known for its tteokbokki, gimbap, noodles and other specialties eaten right in front of the stalls.

However, bulgogi beef is not, originally, a street food recipe in the strict sense. Rather, it is its modern adaptation into a sandwich, gimbap, cup-bap or rice bowl that brings it closer to this culture of fast food.

Bulgogideopbap, in other words bulgogi beef served on rice, does exist in Korean cuisine.

Our recipe is somewhere in between: traditional inspiration and the ultra-practical side of homemade Korean street food.

Why has Korean street food become so popular in France?

Korean cuisine has grown spectacularly in France in recent years, and it’s hard to separate this phenomenon from Hallyu, the South Korean cultural wave driven by K-pop, cinema and K-dramas.

Thirty years ago, only a few Korean restaurants were listed in Paris. Today, bibimbap, Korean fried chicken, bulgogi, tteokbokki and gimbap are much more easily accessible.

And the trend continues. In 2026, the City of Paris, for example, is programming workshops dedicated to cup-bap, presented as a staple of Korean street food: rice with toppings and served in an easy-to-take format.

This success can also be explained very simply by the format of the dishes. An easy Korean meal bowl often combines rice, meat, vegetables, condiments and sauces on the same plate. It is colorful, customizable and particularly adapted to current habits.

Our Korean Beef Lunchbox ticks exactly these boxes.

The Ingredients for an Easy Bulgogi Beef Recipe

For 3 to 4 people, you mainly need:

400 g of minced beef;

250 to 280 g of raw rice;

soy sauce;

mirin;

honey or brown sugar;

garlic and ginger;

toasted sesame oil;

Korean apple vinegar;

1 cucumber;

gochujang;

spring onions;

sesame seeds.

You can also add one fried egg per person.

The easy homemade bulgogi marinade

To make the bulgogi beef sauce, mix 3 tablespoons of soy sauce with 1 tablespoon of honey or brown sugar, 1 tablespoon of mirin, 1 teaspoon of Korean apple vinegar, 1 teaspoon of sesame oil, 2 cloves of garlic, 2 teaspoons of fresh ginger, and black pepper.

This honey soy sauce bulgogi sauce should be salty, slightly sweet, fruity and very fragrant.

Korean cucumber

Finely slice the cucumber and mix with Korean apple vinegar, soy sauce, sugar, sesame oil and sesame seeds.

A pinch of gochugaru is optional.

Simply let the Korean cucumber sit for a while the rest of the dish cooks.

Caramelize the ground beef well with soy and ginger sauce

This is probably the most important step.

Heat a large frying pan with a little oil then add the beef. Spread it out and let it sear for about a minute before you start breaking it up with a spatula.

If you mix non-stop from the get-go, the beef releases its water and steames.

Instead, let some parts color nicely. Then add the sauce and continue cooking until it reduces almost completely.

The bulgogi beef should be shiny, slightly sticky, and have a few nicely grilled bits around the edges.

Korean Gochujang Bowl: My Tips for Success

Use a large skillet. The more the beef is crammed together, the more water it releases. A wide surface area facilitates caramelization.

Do not pour the sauce immediately. Brown the meat first, then add the seasoning.

Keep the rice fairly neutral. A round or medium-grain white rice works perfectly with this Asian ground beef rice.

Dose the gochujang according to your taste. This fermented chilli paste brings a lot of character but its level of spiciness varies depending on the brand.

Add the egg at the last minute. With a yolk that is still runny, it mixes with the gochujang and the juice of the bulgogi beef to form a particularly gourmet sauce.

For a lunchbox, ideally store the cucumber in a separate small container. Simply reheat the rice and beef before adding the cold elements.

Bulgogi beef can be made two days in advance and stored in the refrigerator in an airtight container.

FAQ – Bulgogi beef: the most searched questions

Can you make bulgogi with ground beef?

Yes. It’s not the traditional form of bulgogi beef, which usually uses thin slices of marinated meat, but ground beef makes a great express adaptation. It absorbs the sauce quickly and caramelizes easily in the pan.

What meat is traditionally used for bulgogi?

Traditional bulgogi beef is usually prepared with tender beef cut into very thin slices. VisitKorea mentions marinated meat with soy sauce, garlic, sesame oil, sugar and fruits or vegetables such as pear and onion.

Is bulgogi spicy?

Not necessarily. The classic marinade of bulgogi beef is rather mild and sweet and salty. In this recipe, the spiciness comes mainly from the gochujang sauce served separately, which allows everyone to dose it.

What to replace pear in a bulgogi marinade?

For a pear-free bulgogi recipe, you can play on the balance between sweetness and acidity. Here, honey brings sugar and Korean apple vinegar a fruity note. The result is not the same as a traditional marinade but works particularly well with ground beef.

Can you make this bulgogi beef bowl ahead of time?

Yes. Rice and bulgogi beef can be made ahead of time and stored in the fridge for about two days. Store the seasoned cucumber separately so that it stays fresh and crunchy. This is a really good Korean beef lunchbox option.

The bulgogi beef bowl is made with hot rice, beef seasoned with soy sauce, honey, mirin, garlic, ginger, and sesame oil, and then seared until caramelized.
