Matériel nécessaire

  • 1 poêle
  • 1 air fryer
  • 1 casserole ou rice cooker
  • 1 saladier
  • 1 planche à découper

Ingredients

For the marinated steak

  • 1 ribeye from 350 to 450 g or 2 small ribeye
  • 3 c. tablespoon soy sauce
  • 1 c. tablespoon neutral oil or sesame oil
  • 1 c. teaspoon honey or brown sugar
  • 1 grated garlic clove
  • 1 small piece of grated ginger optional
  • Black pepper
  • 1 dash of rice vinegar or lime juice optional

For vegetables at air fryer

  • 2 carrots
  • 1 handful of green beans
  • 1 c. tablespoon olive oil or neutral oil
  • 1 c. tsp soy sauce
  • 1 c. teaspoon honey
  • Black pepper
  • 1 pinch paprika or sweet chilli optional

To serve

  • About 300 g hot cooked rice
  • Sesame seeds optional
  • Spring onions coriander or chives
  • A drizzle of sesame oil optional

Préparation

  • Mix the soy sauce, oil, honey, garlic, ginger, pepper and possibly a dash of rice vinegar.
  • Place the ribeye in the marinade and let it rest in the refrigerator for at least 30 minutes and ideally 1 to 2 hours.
  • Peel the carrots and cut them into sticks or bevelled pieces. If the beans are raw, blanch them for a few minutes and drain well.
  • Mix the vegetables with the oil, soy sauce, honey, pepper and paprika if necessary.
  • Cook in air fryer at 190°C for about 10 minutes, shaking the basket halfway through. The vegetables should be golden brown but retain some crunchiness.
  • Meanwhile, prepare the rice and keep it warm.
  • Remove the ribeye from the marinade and drain well.
  • Heat a frying pan with a little fat and grill the steak for about 3 minutes on each side, adapting the time to its thickness and desired doneness.
  • Place the meat on a board and let it rest for 5 to 8 minutes.
  • Thinly slice the ribeye with ply, carefully retaining the resting juices.
  • Divide the rice between two bowls. Add the carrots and green beans, then arrange the steak slices.
  • Drizzle with the resting juices from the meat and finish with sesame, spring onions and possibly a few drops of sesame oil.

Notes

After slicing the meat, mix its resting juices with 1 teaspoon of soy sauce and a few drops of rice or lime vinegar. Immediately pour this spicy juice over the rice and steak: the acidity balances the honey and transforms the bottom of the bowl into an extremely tasty little sauce.
