Thiakry: recipe for Senegalese dessert with millet and raisins
Thiakry is a fresh and creamy Senegalese dessert made with millet couscous, yogurt, cottage cheese, condensed milk and raisins. A simple recipe, flavored with vanilla and nutmeg, perfect at the end of a meal or as a snack.

- 100 g millet couscous
- 200 g cottage cheese
- 1 plain yogurt
- 8 cl liquid cream
- 8 cl unsweetened condensed milk
- 50 g cane sugar
- 1 c. teaspoon vanilla extract
- 1 c. tablespoon raisins
- 1/2 c. teaspoon nutmeg
- 6 cl hot water for millet
- Water to rehydrate the raisins
Soak the millet couscous in 6 cl of hot water until completely absorbed.
Steam the millet couscous for 20 minutes, then let it cool completely.
Rehydrate the raisins in a little water for 30 minutes, then drain them.
In a bowl, mix the cottage cheese, yoghurt, liquid cream, unsweetened condensed milk, sugar, vanilla and nutmeg.
Add the cooled millet couscous and then the raisins.
Divided into verrines or in a large salad bowl.
Refrigerate for at least 1 hour before serving cold.
Dessert is best cold.
You can adjust the amount of milk or cream depending on the desired texture.
You can replace the raisins with coconut or dried fruit.
