WHO IS DUMPLINGS AND MORE?
Dumplings & More is the brainchild of Manel Tari and Salim Berkoun, two food and world food enthusiasts. This idea was born one day in 2019, when Manel and Salim decided to spend the time around their common passion: cooking. Thus was born the Instagram page “Dumplings and more”, where they post the recipe from a different country every day, changing countries every month.
Why Dumplings & More?
Dumpling is much more than just a raviolo. This Anglo-Saxon term can refer to a dough that is sometimes fried, sometimes cooked in water, or steamed, stuffed or not, sweet or salty. In short, it is the basis and the link between all cuisines. This is what we have been discovering with you every day for three years now.
Through each recipe, we meet traditions, cultures and stories. Our journey takes us to the four corners of the world, from Korea to Senegal to Australia and Chile. Through a dish, a recipe, a product, we discover sometimes surprising links between influenced or influential culinary cultures.
This trip is an opportunity to go back in time to understand the expansion of ancient empires, colonies, migrations, but also on a more positive note, travel and commercial and cultural exchanges.
You will therefore find on our site simple everyday recipes, as well as those of the major celebrations common or particular to each country. However, we do not take any liberty and present you traditional recipes as they are usually prepared.
All our recipes are classified by category: starters, main courses, dessert and their local equivalents, because meals do not take place in the same way everywhere. Street food also has an important place on our site, as it is an integral part and sometimes represents the norm of everyday life in some cultures.
We have also classified breads, drinks and preserves separately, an opportunity to start fermenting and explore the taste qualities of different flours. Spice mixturesare also to be found, because they make it possible to trace ancestral exchanges between peoples.
