Ingredients

For the kyufte

  • 300 g ground pork
  • 200 g ground beef
  • ½ onion, finely chopped
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon ground cumin

For the kebapche

  • 250 g ground beef
  • 250 g ground pork
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper

For the Strandzhanski shish

  • 500 g diced lamb
  • 125 g lamb fat or strainer
  • 150 g mushrooms, halved
  • Melted butter
  • Salt
  • Pepper
  • Paprika

To serve

  • Lyutenitsa
  • French Fries
  • Grated Kashkaval
  • Fresh salad or bean salad optional

Preparation

  • Prepare the kyufte: mix the ground pork, ground beef, onion, garlic, salt, pepper and cumin.
  • Cover and let rest for 30 minutes in the refrigerator.
  • Divide the filling into 8 portions, form balls and flatten them.
  • Prepare the kebapche: mix the ground beef, ground pork, cumin, salt and pepper.
  • Divide into 8 portions and shape into long cylinders. Set aside in the fridge.
  • Prepare the skewers: season the lamb with salt, pepper and paprika.
  • Cover and let rest for 30 minutes in the refrigerator.
  • Assemble the skewers, alternating the pieces of lamb, the fat or strainer and the mushrooms.
  • Heat the barbecue, grill or grill pan.
  • Cook the kyufte for about 5 minutes on each side.
  • Cook the kebapche for about 5 minutes on each side, turning regularly.
  • Cook the skewers, turning often and brushing with melted butter.
  • Serve immediately with fries, lyutenitsa and grated kashkaval.

Notes

Ground meats should rest before cooking to better stand on the grill.
For a more authentic cooking, choose a charcoal barbecue or a very hot grill.
The meshana skara varies according to the region and the restaurant: you can also add a pork chop, a sausage, a pork skewer or grilled vegetables.
Lyutenitsa is the ideal accompaniment: its taste of pepper and tomato balances the richness of grilled meats.
